One of my favourite things to cook is cottage pie - this recipe is so easy and there is so much veg packed in it too - perfect to get in that extra speed if you are on slimming world :)
I try and batch cook this and also make bigger portions as they make great lunches the next day . Who doesn’t love leftovers for lunch!
INGREDIENTS
All you need is
250G lean mince beef
Beef stock cube
1/2 onion
150G frozen mixed vegetables
1 tablespoon oregano
1 tablespoon mixed herbs
1/3 tablespoon onion salt
Plenty of pepper :)
Swede for the topping - I’ve used fresh and also the microwave swede- if you are following slimming world be sure to check for syns on the ready made packets
LETS GET COOKING
Firstly fry off your mince with your onion until brown. I don’t preheat the oven until everything is simmering away :)
Add your veg to a pan with a little water - just to cover it slightly and then add in your mince to this with your stock cube.The water will reduce slightly and be a delicious stock like gravy for your filling.
Now pre heat your oven and then add in your herbs to the mixture and let it simmer away for 20 minutes until the vegetables are cooked through.
Pop your swede in a pan to boil until soft for the topping . Top tip- you can put your swede in the microwave to soften but for a cottage pie I prefer to boil it . For quickness though , definitely try singing swede :)
Once the swede has softened and the pie filling is cooked through - add it to your dish and put in the oven for 20 minutes - if you put it under the grill you will get a crispy topping . A little sprinkle of cheese is good for this too!
Serve up with whichever side you like - we’ve had a little gravy and some spring greens .
