SLIMMING WORLD FISH CURRY

Now, when we have fish , I’ll admit , it’s the basics - fish and chips with peas or something along them lines . I have never even tried a fish curry , let alone made one .



I had a fish pie mix in the freezer that I had intended to make a fish pie at some point but I had gone off the idea and had heard fish curry was meant to be really yummy so I got together some ingredients and winged it - yes winged it and you know what?

It was absolutely delicious! And completely Syn free!

INGREDIENTS

Can of chopped tomatoes
2x white onions
1x vegetable stock
2x tablespoons of curry powder
1x teaspoon of coriander
Dollop of tomato purée
Salt and pepper
1x teaspoon of garlic - I use lazy garlic
fish pie mix - you can use any fish really . Our fish pie mix had salmon , cod and mackerel in it




HOW TO

Boil your kettle and make up your stock and also add to it the chopped tomatoes ,  I tablespoon of curry powder , coriander and the tomato purée and give it a good mix and let it sit .



Fry off both of your onions with 1 teaspoon of curry powder and the garlic  until they are soft. Then add in your mixture and give it a good stir . Once it has been bubbling for 5 minutes add in your fish pieces.

The idea is for your fish to boil in the sauce rather than fry - this way it will stay soft and moist rather than dry.

Pop a lid on your pan or cover with tin foil like  I do , and let it simmer away for 25 minutes . Give it a stir and check on it half way and then it is ready to eat :)



That’s it . It is as simple as that and honestly it tastes so good. I served it up with rice and some tender stem broccoli and we also had left overs for lunch the next day.
