OVERNIGHT WEETABIX | LEMON CHEESECAKE

The overnight weetabix hype has been going around for quite a while now ,and I thought I would give it a go myself and make some recipes.


My ultimate favourite flavour dessert is lemon so I’ve whipped up a lemon cheesecake inspired weetabix breakfast and it’s actually pretty good.

I’ve used protein weetabix in there to get that extra protein in but you can use whichever ones you have at home :)

GET LAYERING!

I’ve crushed up one and half weetabix and added 60ml of semi skimmed milk and a good serving of maple syrup to sweeten the base.

I use sugar free syrup from muscle food but you could use honey, sweetener or another sweet alternative. 

Now add some lemon juice and some rind to 100 grams of 0% fat free Greek yoghurt and mix mix mix!. 

Taste your yoghurt as you go to see if it needs more lemon :), then add that layer on.

Now top with berries . I used 50 grams of raspberries as they needed using up .

Leave it in the fridge overnight and then enjoy in the morning.

This was an absolute treat for breakfast and If you are calorie counting it’s 212 calories and 20 grams of protein .

The jar I have used is a kilner one from TK Maxx but you can use any old jar,jam jars would work really well with this recipe too.
