AUTUMN SLOW COOKER BUTTERNUT SQUASH SOUP

When it comes to this time of year I absolutely love all the comforting dishes for dinner time . Stews and homemade soups with crusty bread - yum!.


I made a batch of butternut squash soup over the weekend and thought I’d share my recipe with you as I know they go down really well :)

INGREDIENTS

1 butternut squash diced or 200g of frozen chopped butternut squash
1 white onion
5 large carrots- chopped 
1 large white potato - diced
1x stock cube - any flavour
1x stock pot - any flavour
Teaspoon of onion salt 
Sprinkling of black pepper
Tablespoon of mixed herbs 
1 garlic clove

METHOD

Chuck all your ingredients in the slow cooker , fill to the top of your ingredients with hot water and give it a good mix , put it on low for 8 hours . That is literally it. I’ve used vegetable stock before and chicken .



I prefer the chicken but whichever you have in is absolutely fine. After the 8 hours , give it a good whizz with the hand blender and it’s ready to serve.


Crusty bread is always yummy with this or a ciabatta roll toasted :)
