LEMON AND POPPY SEED BAKED OATS

When it comes to breakfast , I do like to change it up a bit and try out different recipes. Baked oats are quite popular when it comes to slimming world and I really fancied trying out some.



I came up with this  really yummy lemon and poppy seed recipe initially for Imbolc , which is a pagan holiday . Traditionally I would bake a lemon drizzle cake for this but being on slimming world I thought I’d make a slimming world friendly version for myself .

They taste AMAZING! and if you are on slimming world , they make four and are only 1/2 syn plus your healthy extra b!.


INGREDIENTS
40g Porridge oats
2x eggs
A dollop of quark - big tablespoon
Pinch of baking powder
Sprinkle of poppy seeds
1/2 lemon - the juice
1/2 teaspoon lemon curd

HOW TO ...

First preheat your oven 180c . Blitz your porridge oats with a blender . I use a hand blender and a hug , it’s easier and only one thing to wash up afterwards :) Add your eggs and quark and give it a good mix . Next squeeze in your lemon juice and mix .



Add in your poppy seeds and baking powder . I don’t syn these purely because I only use a little pinch of baking powder and when weighing the poppy seeds , I didn’t even get to 1g with the amount I used, which was probably just over a teaspoon....

*but definitely do which method is best for you and to protect your weight loss. I do it this way and still lose weight , so which ever is best for you then definitely do that :)



Once it is all mixed in , get your silicone muffin cases ready. I use the ones from the Vonhaus silicone bakeware set. They are the perfect size and you could also use the loaf tray in the set if you wanted to make a big batch and slice it up for the freezer :)

Spray the cases with fry light and pop half the mixture in them . Now get your teaspoon of lemon curd and divide it between the four cases .



After you’ve done that , cover up the curd with the remaining mixture and then pop them into the oven.

*The lowest syn lemon curd is the gales one , which is 1/2 syn for a teaspoon. Any lemon curd is fine and I have used a few but the lower the syn, the more syns you have for the rest of your day :)*



In the oven on 180C for 25 minutes and then serve up with whichever speedy fruit you have in .

These go really well with fresh raspberries and of course a nice big cup of tea :)
