One of my favourite desserts ever is cheesecake , I absolutely love it and it would be the first thing I order for my pudding when we go out for dinner .
Being on slimming world , I wanted to try and make a low syn cheesecake dessert that would hit the spot and still keep me on track.
I am loving slimming world and I’m always on the look out for making my favourite meals and treats slimming world friendly .. well I have definitely exceeded my expectations with this one!!
WHAT YOU NEED
2x lotus biscuits
Handful of Raspberries
Handful of Strawberries chopped
1x tablespoon lotus biscoff spread
Fat free yoghurt - you can use any , Greek , natural or Greek style , I have used all three and it tastes the same although I do prefer the Greek yoghurt as it’s a lot thicker than the others :)
TIME TO ASSEMBLE :)
Get your bowl and now it’s time to start layering up your cheesecake !
First add a layer of yoghurt . If you have a 500nl tub then I usually use half of it for the base , or just under half .
Crumble up your lotus biscuits and sprinkle them on the yoghurt . I stick them in a bag and give them a little bash with a wooden spoon.
Now add on your fruit . I have added some banana before to this and it gives it an extra sweetness .. You can use any fruit you want really , it’s entirely up to you.
We went Strawberry picking and I used some of the strawberries from there a few weeks ago and it was so delicious and sweet !
Now melt your biscoff spread in the microwave for 30 seconds and drizzle that on , and there you have your cheesecake in a bowl.
You could adapt this and use a flavoured yoghurt or add some melted strawberry jam for a strawberry version. The possibilities are endless.
