One thing we love in this house is blueberry muffins. They are our absolute favourite!. We haven’t had them for a while and I thought Nila and I could whip a batch up ready for the weekend :)
They are really easy to make and don’t take much prep or time at all !
INGREDIENTS
180G Self raising flour
4 tablespoons of honey
120g Butter
2x Eggs
A punnet of blueberries or whatever berries you have in - we also added half a punnet of raspberries to this batch :)
METHOD
Pre heat your oven to 180c / Gas Mark 5.
Mix together the eggs , butter and the honey. You can use sugar if you prefer but we don’t use sugar in our house - honey all the way :)
Then add the flour little by little and fold in until you get a thick but moist consistency still. If your mixture is a little dry then you can add a little milk to keep it moist.
Time to add your berries - if you’ve got a little helper with you then be sure to keep your eye on them berries as they might go missing ! :)
Pop them in muffin cases- make sure they are muffin cases as these bad boys rise!. Leave them to bake for 20-25 minutes and check with a knife to be sure they are cooked.

Ooh, we make blueberry muffins quite a lot but have never thought about adding raspberries before! We'll have to give it a try :)

I'm a blueberry muffin fiend! Although I haven't really tried having raspberry on it. I think I'd try having some of it the next time.
