I always try to make our meals from scratch, I would say around 90% of our dinners are home-cooked. This sausage pasta is one of my favourite easy dinner recipes: tasty, low cost, and quick to make after the school run. It’s also perfect for batch cooking, freeze some for the days when you want a day of cooking, it’s also great for pack lunch flasks :)
Ingredients (serves 4)
4–5 sausages
300g pasta
1 tin chopped tomatoes or passata
2–3 sun-dried tomatoes
1 teaspoon brown sugar
1 clove garlic, minced
1 teaspoon dried oregano
A handful of spinach
Cheese (measure with your heart )
Method
Cook the pasta in boiling water with a stock cube, trust me, it makes all the difference . While that’s cooking, fry the sausages lightly, then remove the skin and crumble or mince them. Add garlic and oregano to the sausage, then stir in the chopped tomatoes, brown sugar, and sun-dried tomatoes.
Let the sauce simmer for a bit, then toss in the spinach and cook until it’s wilted and everything is piping hot. Drain the pasta, mix it into the sauce, and top with as much cheese as your heart desires.
