EASY PEASY ONE CUP PANCAKES

One thing my girls love is pancakes . If they could have them every morning for breakfast then I know they would !. It’s one breakfast we can all sit down together and enjoy without to much fuss.

I thought I would share with you my easy peasy one cup pancakes . This recipe is so simple and it takes no time at all. You can leave them plain and add your toppings on top or you can add some fruit or raisins into the mixture.

We’ve gone with blueberry pancakes this time as they really are delicious and we are all a little blueberry obsessed! :)

INGREDIENTS

One cup of milk
One cup of flour
One egg

That’s it! One cup makes around 12 pancakes , palm size , so if you wanted a few more then  just double the batch. They can also be frozen, and they keep up to 5 days in the fridge:)

Add all your ingredients into a bowl and get mixing . We mix quite a lot , but I think this helps make the pancakes super fluffy. If you have an electronic mixer than that’s even better!

To make sweet pancakes you could add a mashed banana to the mix or if you are adding your toppings in between then spray your fry light into the pan and pop some of your pancake mix in .

Whilst their cooking , chop up whatever you want to add/ I cut my blueberries in half to stop any choking hazards , then pop them into the pancakes.

Leave until you can see the mixture create tiny little bubbles then flip over and do the other side for a minute and your done! :)

It is as easy as that. Why not spread some yummy Nutella on for an extra naughty weekend breakfast with the kiddies !

I’d love to know if you recreate them and let me know what your favourite toppings are :)
