One thing Kadiann and I love this time of year - mince pies! We really can’t get enough of them. A nice cup of tea and a mince pie in the evening with a Christmas movie , perfect!
Mezz and Alessia don’t like them so it’s only me and Kay that eat them. We make our one batch every year, as well as buy tons of them throughout December :)
I thought I would share with you our super easy mince pies . We don’t make the pastry- who’s got time for that when your busy eating, shopping, watching movies and being merry right? . They take no time at all and are absolutely delish!
WHAT YOU NEED
A cup
Fry light or a little butter
Some cinnamon- this is optional
A jar of mincemeat/ the co op one is really yummy
One ready to roll shortcrust pastry - you can use puff but we prefer the shortcrust for mince pies.
LETS GET MINCE PIE’ING :)
Preheat your oven , gas mark 4, 170C and get your tray out. We use a Yorkshire pudding tray. That’s what we call it anyway :)
Find a cup that fits perfectly on the holes in your tray and use this to cut out your mince pie bases.just press down on the pastry and pop them on your tray.and press down so they become little cases.
Be sure to Spray the tray with a little dry light first or spread a bit of butter on the tray so they don’t stick.
Pop a spoonful of mincemeat into the cases or more depending on the size of your case. You can sprinkle a little cinnamon on top of the mincemeat , this is obviously optional and a little extra Christmassy touch
We then cut out the topping with a festive cutter- Kay chose the Christmas tree :) make enough tops and pop them on.
Put them in the oven for 25 minutes or until golden and there you have super simple mince pies that taste absolutely delicious :)
