Pumpkin season and I am starting it off with a new recipe. We all know my love for anything pumpkin and my pumpkin pie recipe is SO good.
I wanted to try and recreate the Starbucks pumpkin loaf but with a twist. I completely winged this recipe and it is honestly the best tasting pumpkin spice loaf you will ever taste.
I added a pumpkin pecan icing drizzle on top too and it didn’t last two days in this house :)
INGREDIENTS
2 eggs
100g soft butter
1 teaspoon ginger
1 teaspoon nutmeg
1 teaspoon cinnamon powder
165g light brown sugar
150g self raising flour
225g Pumpkin - I roasted a whole pumpkin and had tons of pumpkin for different recipes but you can just pick up a tin of pumpkin purée :)
ICING
60g icing sugar
Syrup of your choice. I used the sugar free pumpkin pecan waffle syrup you can get from TK Maxx
METHOD
Preheat your oven 180C / gas mark 4
Mix your sugar and butter until it becomes a paste. Add in your eggs , mix and then add your dry ingredient bit by bit mixing each part each time.
Now add your pumpkin and give it all a good stir.
Line your loaf tin and give it a spray or a wipe with some butter and then add your mixture and bake for 50 minutes on 180C/ gas mark 4 .
Leave it to cool for a while then add your icing drizzle.
I got 7 good slices from one loaf :)
