SLOW COOKER MINTED LAMB STEW

September has arrived, and with it comes the beginning of cosy season in our house. The days are getting cooler, the evenings are darker, and the slow cooker has officially made its way back onto the kitchen counter. One of the first dishes we always make when autumn rolls around is a slow-cooker minted lamb stew



There’s just something magical about adding all your ingredients into one pot, switching it on, and letting the slow cooker do the hard work while making the house smell amazing!.

This minted lamb stew is everything you want from a comfort meal and is absolutely perfect for chilly nights. Even better, it’s budget-friendly, makes generous portions, and tastes even better the next day.

Ingredients

  • 500g diced lamb

  • 4 carrots, chopped

  • 3–4 medium potatoes, diced

  • 1 cup frozen peas

  • 1 vegetable stock pot

  • mint sauce (adjust to taste)

  • Lamb gravy granules (amount depends on how thick you’d like your stew)

  • Plain flour (for coating the lamb)


Method 

  1. Start by coating your diced lamb in flour. Lightly fry it in a pan until browned. This step locks in the flavour and gives your stew extra taste.

  2. Add the lamb to your slow cooker along with the chopped carrots, potatoes, and vegetable stock pot.

  3. Pour in boiling water and stir through enough lamb gravy granules to reach your desired consistency. If you like a thicker stew, add more gravy; if you prefer a lighter broth, add less.

  4. Cook on low for 8 hours, stirring halfway through.

  5. At the halfway point, add the frozen peas and mint sauce. I used half a tub, but it depends on how much you love mint sauce; we LOVE IT! :)

  6. Once cooked, serve in bowls with Yorkshire puddings or thick slices of crusty bread, perfect for soaking up that rich gravy.
